Loaded Sweet Potato Fries
Ingredients
- ½ (20-oz) pkg frozen sweet potato crinkle fries
- 1 Tbsp olive oil
- ⅛ tsp chili powder
- 4 slices center cut bacon
- ½ cup shredded mozzarella cheese
- 1 green onion, sliced
- ¼ cup sour cream
- ¼ cup pico de gallo, drained
Instructions
- Preheat oven to 425°F. Toss together fries, oil, and chili powder on a rimmed baking sheet; spread in a single layer. Bake 20 to 22 minutes or until crispy.
- Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crispy; crumble bacon.
- Divide fries between 2 plates. Top with cheese, bacon, onion, sour cream, and pico.
