Loaded Sweet Potato Fries

Ingredients

  • ½ (20-oz) pkg frozen sweet potato crinkle fries
  • 1 Tbsp olive oil
  • ⅛ tsp chili powder
  • 4 slices center cut bacon
  • ½ cup shredded mozzarella cheese
  • 1 green onion, sliced
  • ¼ cup sour cream
  • ¼ cup pico de gallo, drained

Instructions

  1. Preheat oven to 425°F. Toss together fries, oil, and chili powder on a rimmed baking sheet; spread in a single layer. Bake 20 to 22 minutes or until crispy.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crispy; crumble bacon.
  3. Divide fries between 2 plates. Top with cheese, bacon, onion, sour cream, and pico.
