Prosciutto and Basil Shrimp
Ingredients
- 2 lb unpeeled, large raw shrimp
- 16 thin slices prosciutto
- 32 large fresh basil leaves
- 3 Tbsp olive oil
- 3 Tbsp balsamic glaze
- 2 peaches, peeled and diced
- 2 Tbsp minced seeded jalapeño pepper
- 2 Tbsp honey
- 1 Tbsp balsamic vinegar
Instructions
- Preheat oven to 425°F. Peel and devein shrimp, leaving tails intact. Cut each slice prosciutto in half lengthwise.
- Wrap one basil leaf and one slice prosciutto around each shrimp. Place on a lightly greased foil-lined rimmed baking sheet. Drizzle with oil.
- Bake 12 to 15 minutes or until shrimp turn pink. Drizzle with balsamic glaze.
- Meanwhile, stir together diced peaches, jalapeño, honey, and vinegar in a bowl. Serve with shrimp.
