Prosciutto and Basil Shrimp

Ingredients

  • 2 lb unpeeled, large raw shrimp 
  • 16 thin slices prosciutto
  • 32 large fresh basil leaves
  • 3 Tbsp olive oil
  • 3 Tbsp balsamic glaze
  • 2 peaches, peeled and diced
  • 2 Tbsp minced seeded jalapeño pepper
  • 2 Tbsp honey
  • 1 Tbsp balsamic vinegar

Instructions

  1. Preheat oven to 425°F. Peel and devein shrimp, leaving tails intact. Cut each slice prosciutto in half lengthwise.
  2. Wrap one basil leaf and one slice prosciutto around each shrimp. Place on a lightly greased foil-lined rimmed baking sheet. Drizzle with oil.
  3. Bake 12 to 15 minutes or until shrimp turn pink. Drizzle with balsamic glaze.
  4. Meanwhile, stir together diced peaches, jalapeño, honey, and vinegar in a bowl. Serve with shrimp.
