Tajin-Roasted Cauliflower with Avocado Mousse

Ingredients

  • 2 heads cauliflower
  • ¼ cup olive oil
  • 1 Tbsp Tajin seasoning (or use chili powder)
  • 2 avocados
  • ¼ cup fresh cilantro leaves
  • ¼ cup sour cream
  • 1 lime

Instructions

  1. Preheat oven to 425°F. Cut cauliflower into large florets; toss with oil and seasoning on a lightly greased, large rimmed baking sheet. Spread in a single layer. Bake 18 to 20 minutes or until browned and tender.
  2. Meanwhile, place avocado flesh, cilantro leaves, and sour cream in a food processor. Grate zest and squeeze juice from lime into bowl. Process on High 1 to 2 minutes or until mixture is smooth and fluffy. Season with salt and pepper, if desired.
  3. Serve cauliflower warm or at room temperature with Avocado Mousse.
