Tajin-Roasted Cauliflower with Avocado Mousse
Ingredients
- 2 heads cauliflower
- ¼ cup olive oil
- 1 Tbsp Tajin seasoning (or use chili powder)
- 2 avocados
- ¼ cup fresh cilantro leaves
- ¼ cup sour cream
- 1 lime
Instructions
- Preheat oven to 425°F. Cut cauliflower into large florets; toss with oil and seasoning on a lightly greased, large rimmed baking sheet. Spread in a single layer. Bake 18 to 20 minutes or until browned and tender.
- Meanwhile, place avocado flesh, cilantro leaves, and sour cream in a food processor. Grate zest and squeeze juice from lime into bowl. Process on High 1 to 2 minutes or until mixture is smooth and fluffy. Season with salt and pepper, if desired.
- Serve cauliflower warm or at room temperature with Avocado Mousse.
