Ground Beef-Cauliflower Mac and Cheese

Ingredients
- 2 Tbsp butter
- 1 (12-oz) pkg cauliflower florets
- ¼ tsp salt
- ¼ tsp pepper
- ¾ lb ground beef
- ¾ cup shredded Cheddar cheese
- ¼ cup heavy cream
- ¼ cup whole milk
- Chopped fresh parsley (optional)
Instructions
- Melt butter in a Dutch oven over medium-high heat. Add cauliflower, salt, and pepper; cook 10 to 15 minutes or until lightly browned and tender. Add beef, and cook 5 to 10 minutes longer or until beef is browned and crumbly.
- Meanwhile, combine cheese, cream, and milk in a microwave-safe bowl. Heat cheese mixture in microwave at HIGH in 30-second intervals until cheese is melted and sauce is smooth.
- Add cheese sauce to beef mixture; toss. Sprinkle with parsley, if desired.
