Ground Beef-Cauliflower Mac and Cheese

Ingredients

  • 2 Tbsp butter
  • 1 (12-oz) pkg cauliflower florets
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¾ lb ground beef
  • ¾ cup shredded Cheddar cheese
  • ¼ cup heavy cream
  • ¼ cup whole milk
  • Chopped fresh parsley (optional)

Instructions

  1. Melt butter in a Dutch oven over medium-high heat. Add cauliflower, salt, and pepper; cook 10 to 15 minutes or until lightly browned and tender. Add beef, and cook 5 to 10 minutes longer or until beef is browned and crumbly.
  2. Meanwhile, combine cheese, cream, and milk in a microwave-safe bowl. Heat cheese mixture in microwave at HIGH in 30-second intervals until cheese is melted and sauce is smooth.
  3. Add cheese sauce to beef mixture; toss. Sprinkle with parsley, if desired.
