Almond Crusted Chicken

Dilly Cauliflower Pilaf and Peas

Ingredients

  • 2 large eggs
  • ½ cup panko breadcrumbs (preferably whole wheat)
  • ¼ cup almond flour
  • 2 tsp garlic powder
  • 1 tsp seasoned salt
  • 3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
  • ¼ cup olive oil

Instructions

  1. Lightly beat eggs in a shallow bowl. Stir together panko, almond flour, garlic powder, and salt in a second shallow bowl. Dip chicken in eggs; dredge in panko mixture, pressing gently to adhere.
  2. Cook chicken, in batches, in hot oil in a large skillet over medium-high heat 3 minutes per side or until chicken is done.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen mashed cauliflower with olive oil and sea salt
  • ¼ cup chopped fresh dill (or use 1 Tbsp dried) 
  • 1 (15-oz) pkg frozen green peas

Side Dish Instructions

  1. Microwave cauliflower according to package directions; stir in dill.
  2. Cook peas according to package directions.
