Almond Crusted Chicken
Dilly Cauliflower Pilaf and Peas
Ingredients
- 2 large eggs
- ½ cup panko breadcrumbs (preferably whole wheat)
- ¼ cup almond flour
- 2 tsp garlic powder
- 1 tsp seasoned salt
- 3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
- ¼ cup olive oil
Instructions
- Lightly beat eggs in a shallow bowl. Stir together panko, almond flour, garlic powder, and salt in a second shallow bowl. Dip chicken in eggs; dredge in panko mixture, pressing gently to adhere.
- Cook chicken, in batches, in hot oil in a large skillet over medium-high heat 3 minutes per side or until chicken is done.
Side Dish Ingredients
- 1 (20-oz) pkg frozen mashed cauliflower with olive oil and sea salt
- ¼ cup chopped fresh dill (or use 1 Tbsp dried)
- 1 (15-oz) pkg frozen green peas
Side Dish Instructions
- Microwave cauliflower according to package directions; stir in dill.
- Cook peas according to package directions.
