Pesto-Grilled Salmon
Herby Burrata Potatoes
Ingredients
- ¼ cup pesto
- 1½ Tbsp olive oil
- 3 (4-oz) salmon fillets
- ¼ tsp kosher salt
- ¼ tsp freshly ground pepper
Instructions
- Whisk together pesto and oil in a small bowl. Preheat grill or grill pan to medium-high heat; lightly coat grill rack with cooking spray.
- Sprinkle salmon with salt and pepper. Grill salmon, covered, 4 to 5 minutes per side or until fish flakes with a fork, basting with pesto during cooking.
Side Dish Ingredients
- 1 lb multicolored baby potatoes, halved
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- ¼ tsp kosher salt
- ¼ tsp pepper
- 1 (4-oz) ball burrata cheese, torn
- 2 Tbsp chopped fresh flat-leaf parsley
- 2 Tbsp fresh basil leaves
- 1 Tbsp chopped fresh dill
Side Dish Instructions
- Preheat grill or grill pan to medium-high heat. Toss together potatoes, oil, garlic, salt, and pepper in a large bowl.
- Cut 2 (10- x 15-inch) pieces of heavy-duty foil; lightly coat with cooking spray. Divide potatoes between foil pieces. Fold up sides to create airtight packets.
- Grill packets 20 minutes or until potatoes are tender when pierced with a fork, turning once.
- Carefully unwrap packets; top potatoes with cheese and fresh herbs.
