Grilled Chicken and Fruit Salad

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ½ Tbsp Montreal steak seasoning
  • 1 Tbsp olive oil
  • 1 (5-oz) pkg spring mix
  • 1 (11-oz) can mandarin oranges, drained
  • 1 cup strawberries, sliced
  • 1 Honeycrisp apple, cored and chopped
  • ¾ cup blueberries
  • ¼ cup olive oil vinaigrette

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with seasoning. Cook chicken in hot oil in a nonstick skillet over medium-high heat 5 to 6 minutes per side or until done; let stand 5 minutes, and cut into bite-sized pieces.
  2. Toss together spring mix, oranges, strawberries, apple, blueberries, and vinaigrette in a large bowl. Divide salad among 2 plates. Top with chicken.

  • ½ (9.5-oz) box Italian-herb flatbread cracker crisps

Side Dish Instructions
