Greek Mac and Cheese
Ingredients
- 12 oz elbows pasta
- 1 red onion, diced
- 2 Tbsp olive oil
- 1 pint grape tomatoes, halved
- 3 cloves garlic, minced
- 2 Tbsp butter
- ¼ cup all-purpose flour
- 3 cups milk
- 1 (8-oz) block mozzarella cheese, shredded
- ¾ cup chopped pitted kalamata olives
- 1½ tsp Italian seasoning
- 1 (5-oz) pkg crumbled feta cheese
Instructions
- Preheat oven to 375°F. Cook pasta according to package directions.
- Cook onion in hot oil in a large skillet over medium-high heat 3 minutes or until softened. Add tomatoes and garlic; cook 5 minutes or until softened and fragrant. Remove from heat.
- Meanwhile, melt butter in a large saucepan over medium heat. Add flour, stirring with a whisk until combined. Reduce heat to medium-low; slowly add milk, whisking constantly until smooth. Add mozzarella, stirring until cheese melts and sauce thickens.
- Toss together pasta, tomato mixture, olives, and Italian seasoning. Spread mixture in a 13- x 9-inch baking dish coated with cooking spray. Pour sauce over pasta mixture; sprinkle with feta.
- Bake 20 to 25 minutes or until bubbly.
