Grilled Lemon Chicken
Warm German Potato Salad and Steamed BroccoliIngredients
- 2 lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 2 Tbsp Montreal chicken seasoning
- 2 lemons, halved
Instructions
- Preheat grill or grill pan to medium-high heat. Cut chicken breasts in half crosswise; pound to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Brush chicken with oil, and sprinkle with seasoning.
- Grill chicken, covered, 4 to 5 minutes per side or until done; grill lemons, cut sides down, 2 minutes.
- Serve chicken with grilled lemons.
Side Dish Ingredients
- 1½ lb red potatoes, quartered
- ¼ cup water
- 6 slices bacon, chopped
- 2 Tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 (12-oz) pkg broccoli florets
Side Dish Instructions
- Combine potatoes and water in a microwave-safe bowl; cover with plastic wrap. Microwave at HIGH 5 minutes or until tender. Drain.
- Meanwhile, cook bacon in a large nonstick skillet over medium-high heat until crisp; remove from heat.
- Add potatoes, vinegar, and mustard to skillet; toss. Season with salt and pepper, if desired.
- Meanwhile, steam broccoli according to package directions.
