Grilled Lemon Chicken

Warm German Potato Salad and Steamed Broccoli

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 2 Tbsp Montreal chicken seasoning
  • 2 lemons, halved

Instructions

  1. Preheat grill or grill pan to medium-high heat. Cut chicken breasts in half crosswise; pound to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Brush chicken with oil, and sprinkle with seasoning.
  3. Grill chicken, covered, 4 to 5 minutes per side or until done; grill lemons, cut sides down, 2 minutes.
  4. Serve chicken with grilled lemons.

Side Dish Ingredients

  • 1½ lb red potatoes, quartered
  • ¼ cup water
  • 6 slices bacon, chopped
  • 2 Tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Combine potatoes and water in a microwave-safe bowl; cover with plastic wrap. Microwave at HIGH 5 minutes or until tender. Drain.
  2. Meanwhile, cook bacon in a large nonstick skillet over medium-high heat until crisp; remove from heat.
  3. Add potatoes, vinegar, and mustard to skillet; toss. Season with salt and pepper, if desired.
  4. Meanwhile, steam broccoli according to package directions.
