Barbecue Pork Salad

Ingredients

  • ¼ cup unsweetened barbecue sauce
  • ¼ cup Ranch dressing
  • ½ lb boneless pork chops
  • 2 tsp barbecue seasoning
  • 1 tsp olive oil
  • ½ (10-oz) pkg chopped romaine lettuce
  • 1 Roma tomato, sliced
  • 1 cup sliced cucumber, cut into half-moons
  • ½ cup shredded sharp Cheddar cheese
  • Chopped green onions (optional)

Instructions

  1. Stir together barbecue sauce and Ranch dressing; set aside.
  2. Meanwhile, cut pork into 1-inch cubes; sprinkle with seasoning. Cook pork in hot oil in a nonstick skillet over medium-high heat 10 minutes or until done.
  3. Divide lettuce between 2 plates. Top with pork, tomato, cucumber, and cheese. Serve with dressing, and top with onions, if desired.
