Barbecue Pork Salad

Ingredients
- ¼ cup unsweetened barbecue sauce
- ¼ cup Ranch dressing
- ½ lb boneless pork chops
- 2 tsp barbecue seasoning
- 1 tsp olive oil
- ½ (10-oz) pkg chopped romaine lettuce
- 1 Roma tomato, sliced
- 1 cup sliced cucumber, cut into half-moons
- ½ cup shredded sharp Cheddar cheese
- Chopped green onions (optional)
Instructions
- Stir together barbecue sauce and Ranch dressing; set aside.
- Meanwhile, cut pork into 1-inch cubes; sprinkle with seasoning. Cook pork in hot oil in a nonstick skillet over medium-high heat 10 minutes or until done.
- Divide lettuce between 2 plates. Top with pork, tomato, cucumber, and cheese. Serve with dressing, and top with onions, if desired.
