Garlic Butter Steak and Potatoes

Ingredients
- 2 (15-oz) pkg frozen oven roasters red potato wedges and onions
- 4 cloves garlic, halved
- 2 lb top sirloin steak
- 1 tsp salt
- 1 tsp pepper
- 2 Tbsp olive oil
- 3 Tbsp garlic and herb butter, cut into 6 pieces
Instructions
- Preheat oven to 450°F. Spread potatoes, onions, and garlic on a large greased rimmed baking sheet. Bake 20 minutes. Season with salt and pepper, if desired.
- Meanwhile, sprinkle steak all over with 1 tsp each salt and pepper. Cook steak in hot oil in a large cast-iron skillet over medium-high heat 6 minutes. Flip and cook 4 to 6 minutes or to desired doneness. Remove from heat. Top with butter; let stand 5 minutes. Thinly slice steak.
- Serve steak with roasted vegetables.
Side Dish Ingredients
- 1 (11-oz) pkg spring mix
- 2 tomatoes, cut into wedges
- 1 (8-oz) pkg fresh mozzarella cheese pearls
- ½ cup creamy Italian dressing
- 1 (5-oz) pkg whole-grain large cut Italian herb croutons
Side Dish Instructions
- Toss together all ingredients in a large bowl. Season with salt and pepper, if desired.
