Ingredients

  • 1 (2-lb) salmon fillet
  • 3 Tbsp olive oil
  • 2 (11.6-oz) pkg bacon Caesar salad kits
  • 1 (5-oz) pkg baby spinach
  • 1 pint grape tomatoes
  • ½ cup freshly grated or shredded Parmesan cheese

Instructions

  1. Preheat broiler with oven rack on second shelf. Place salmon on a greased foil-lined baking sheet. Drizzle with oil; sprinkle with salt and pepper, if desired. Broil 8 to 10 minutes or until fish flakes with a fork.
  2. Toss together salad kit ingredients, spinach, and tomatoes in a large bowl. Flake fish into large pieces, and add to salad. Sprinkle with cheese.

  • 1 (10-oz) container hummus
  • 1 (3.5-oz) pkg sesame crostini toast

Side Dish Instructions

  1. Spread hummus on toast. Serve alongside salad.
