Ingredients

  • ½ lb boneless, skinless chicken thighs
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • ¼ cup low-sodium chicken broth
  • ¼ cup heavy cream
  • 1 Tbsp Ranch dressing mix

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a skillet over medium-high heat 5 minutes per side or until browned.
  2. Reduce heat to medium. Add broth, cream, and dressing mix; cook 4 minutes or until sauce is thickened and chicken is done.

  • 1 (3.5-oz) pouch boil-in-bag brown rice
  • 1 cup frozen mixed vegetables (carrots, green beans, corn, and peas)
  • ½ tsp Italian seasoning

Side Dish Instructions

  1. Cook rice and vegetables according to package directions. Toss vegetables with Italian seasoning in a bowl.
