Creamy Ranch Chicken
Brown Rice and Vegetables
Ingredients
- ½ lb boneless, skinless chicken thighs
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 tsp olive oil
- ¼ cup low-sodium chicken broth
- ¼ cup heavy cream
- 1 Tbsp Ranch dressing mix
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a skillet over medium-high heat 5 minutes per side or until browned.
- Reduce heat to medium. Add broth, cream, and dressing mix; cook 4 minutes or until sauce is thickened and chicken is done.

- 1 (3.5-oz) pouch boil-in-bag brown rice
- 1 cup frozen mixed vegetables (carrots, green beans, corn, and peas)
- ½ tsp Italian seasoning
Side Dish Instructions
- Cook rice and vegetables according to package directions. Toss vegetables with Italian seasoning in a bowl.
