Korean Beef Tacos

Ingredients

  • ½ lb lean ground beef
  • 1 (7-oz) pouch Korean stir-fry simmer sauce
  • 4 soft taco-size flour tortillas
  • ¼ cup kimchi
  • 2 Tbsp roasted, salted peanuts, coarsely chopped
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp Sriracha mayonnaise (see Note)
  • 1 lime, cut into wedges

Instructions

  1. Cook beef in a skillet over medium heat until browned and crumbly; drain and return to skillet. Add simmer sauce; cook 3 to 4 minutes or until thoroughly heated.
  2. Meanwhile, heat tortillas according to package directions.
  3. Fill tortillas with beef and kimchi. Sprinkle with nuts and cilantro. Serve with mayonnaise and lime wedges.

  • 1½ cups cubed pineapple
  • 2 Tbsp chopped fresh cilantro
  • 2 tsp honey
  • 2 tsp lime juice

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
