Country-Fried Steak with Mushrooms
Tangy Green Beans with Almonds
Ingredients
- 6 (5-oz) cubed steaks
- ¾ tsp kosher salt
- ½ tsp pepper
- 4½ Tbsp canola oil, divided
- 1½ Tbsp butter
- ¾ cup sliced onion
- 1½ (8-oz) pkg sliced mushrooms
- 1½ cups low-sodium beef broth
- 1 Tbsp arrowroot (or use cornstarch)
Instructions
- Sprinkle steaks with salt and pepper. Cook steaks in 3 Tbsp hot oil in a large deep skillet over medium-high heat 2 to 3 minutes per side; remove from skillet, and keep warm.
- Add butter and 1½ Tbsp oil to skillet; add onion. Cook, stirring occasionally, 5 minutes. Add mushrooms; cook 4 minutes or until onion is tender and mushrooms are browned. Return steaks to skillet.
- Combine broth and arrowroot, stirring until smooth; add to skillet. Bring to a boil; cook 3 minutes or until sauce is thickened.

- 6 Tbsp sliced almonds
- 1½ (12-oz) pkg green beans, trimmed
- 1½ Tbsp Dijon mustard
- 1½ Tbsp red wine vinegar
- 3 Tbsp olive oil
- ¼ tsp kosher salt
Side Dish Instructions
- Toast nuts in a small skillet over medium heat 3 minutes, stirring often, until beginning to brown.
- Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
- Whisk together mustard, vinegar, and oil; toss with beans and salt. Sprinkle with nuts.
