Country-Fried Steak with Mushrooms

Ingredients

  • 6 (5-oz) cubed steaks
  • ¾ tsp kosher salt
  • ½ tsp pepper
  • 4½ Tbsp canola oil, divided
  • 1½ Tbsp butter
  • ¾ cup sliced onion
  • 1½ (8-oz) pkg sliced mushrooms
  • 1½ cups low-sodium beef broth
  • 1 Tbsp arrowroot (or use cornstarch)

Instructions

  1. Sprinkle steaks with salt and pepper. Cook steaks in 3 Tbsp hot oil in a large deep skillet over medium-high heat 2 to 3 minutes per side; remove from skillet, and keep warm.
  2. Add butter and 1½ Tbsp oil to skillet; add onion. Cook, stirring occasionally, 5 minutes. Add mushrooms; cook 4 minutes or until onion is tender and mushrooms are browned. Return steaks to skillet.
  3. Combine broth and arrowroot, stirring until smooth; add to skillet. Bring to a boil; cook 3 minutes or until sauce is thickened.

Side Dish Ingredients

  • 6 Tbsp sliced almonds
  • 1½ (12-oz) pkg green beans, trimmed
  • 1½ Tbsp Dijon mustard
  • 1½ Tbsp red wine vinegar
  • 3 Tbsp olive oil
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Toast nuts in a small skillet over medium heat 3 minutes, stirring often, until beginning to brown.
  2. Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender.
  3. Whisk together mustard, vinegar, and oil; toss with beans and salt. Sprinkle with nuts.
