Pepperoni Tortilla Pizzas
Mixed Green Salad with Oranges
Ingredients
- 4 low-carb whole-wheat tortillas
- ⅔ cup no-salt-added tomato sauce
- 1 cup sliced mushrooms
- 1½ tsp dried oregano
- 1 cup shredded part-skim mozzarella cheese
- 20 slices turkey pepperoni (about ¼ [5-oz] pkg)
Instructions
- Preheat oven to 400°F. Coat both sides of tortillas with cooking spray, and place on a large baking sheet.
- Bake 3 to 4 minutes or until lightly browned. Remove from oven, and turn tortillas. Spoon sauce evenly over tortillas. Top with mushrooms, oregano, cheese, and pepperoni.
- Bake 4 to 5 minutes longer or until cheese melts. Let stand 2 minutes; cut into wedges.
Side Dish Ingredients
- ¼ cup sliced almonds
- 1 (5-oz) pkg mixed baby greens
- 2 navel oranges, peeled and sectioned
- 2 tsp fresh lemon juice
- 1 tsp Dijon mustard
- Pinch of salt
- ¼ cup olive oil
Side Dish Instructions
- Cook almonds in a dry skillet over medium heat 4 minutes or until lightly toasted.
- Combine greens, orange sections, and almonds in a large bowl.
- Combine lemon juice, mustard, and salt in a small bowl; whisk until blended. Gradually whisk in oil, blending well.
- Drizzle dressing over salad; toss.
