Pepperoni Tortilla Pizzas

Ingredients

  • 4 low-carb whole-wheat tortillas
  • ⅔ cup no-salt-added tomato sauce
  • 1 cup sliced mushrooms
  • 1½ tsp dried oregano
  • 1 cup shredded part-skim mozzarella cheese
  • 20 slices turkey pepperoni (about ¼ [5-oz] pkg)

Instructions

  1. Preheat oven to 400°F. Coat both sides of tortillas with cooking spray, and place on a large baking sheet.
  2. Bake 3 to 4 minutes or until lightly browned. Remove from oven, and turn tortillas. Spoon sauce evenly over tortillas. Top with mushrooms, oregano, cheese, and pepperoni.
  3. Bake 4 to 5 minutes longer or until cheese melts. Let stand 2 minutes; cut into wedges.

Side Dish Ingredients

  • ¼ cup sliced almonds
  • 1 (5-oz) pkg mixed baby greens
  • 2 navel oranges, peeled and sectioned
  • 2 tsp fresh lemon juice
  • 1 tsp Dijon mustard
  • Pinch of salt
  • ¼ cup olive oil

Side Dish Instructions

  1. Cook almonds in a dry skillet over medium heat 4 minutes or until lightly toasted.
  2. Combine greens, orange sections, and almonds in a large bowl.
  3. Combine lemon juice, mustard, and salt in a small bowl; whisk until blended. Gradually whisk in oil, blending well.
  4. Drizzle dressing over salad; toss.
