Ingredients
- 1 cup mayonnaise
- 1 cup minced celery
- 1 Tbsp Dijon mustard (or use grainy mustard)
- 1 tsp lemon zest
- 2 Tbsp fresh lemon juice
- 4 green onions, chopped
- 2 lb peeled and deveined cooked shrimp, chopped
- 12 Hawaiian sweet mini sub rolls, split
Instructions
- Stir together mayonnaise, celery, mustard, lemon zest, lemon juice, and onions in a large bowl; stir in shrimp. Season with salt and pepper, if desired. Chill if time allows.
- Spoon shrimp salad into sub rolls before serving.
