Ingredients
- 1 lb ground beef
- ¼ cup minced onion
- 2½ Tbsp tomato paste
- 1 Tbsp almond flour
- 2 small cloves garlic, minced
- 1 large egg, lightly beaten
- 1½ tsp Southwest seasoning (or use fajita seasoning)
- ½ tsp finely chopped jalapeño pepper
- ¼ tsp salt
- ¼ tsp black pepper
- 1½ tsp olive oil
Instructions
- Preheat oven to 425°F. Gently mix together all ingredients except oil using your hands.
- Shape beef mixture into a freeform loaf on a rack in a broiler pan rubbed with oil.
- Bake 45 minutes to 1 hour or until center is no longer pink and a meat thermometer reads 165°F.
Side Dish Ingredients
- ¼ cup pepitas (pumpkin seeds)
- ½ (10-oz) pkg angel hair coleslaw
- 2 Tbsp chopped fresh cilantro
- 2 Tbsp olive oil
- 1½ Tbsp lime juice
- ⅛ tsp salt
Side Dish Instructions
- Toast pepitas in a dry skillet over medium heat until golden and fragrant.
- Toss together pepitas and remaining ingredients in a bowl.
