Ingredients

  • 1 lb ground beef
  • ¼ cup minced onion
  • 2½ Tbsp tomato paste
  • 1 Tbsp almond flour
  • 2 small cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1½ tsp Southwest seasoning (or use fajita seasoning)
  • ½ tsp finely chopped jalapeño pepper
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1½ tsp olive oil

Instructions

  1. Preheat oven to 425°F. Gently mix together all ingredients except oil using your hands.
  2. Shape beef mixture into a freeform loaf on a rack in a broiler pan rubbed with oil.
  3. Bake 45 minutes to 1 hour or until center is no longer pink and a meat thermometer reads 165°F.

  • ¼ cup pepitas (pumpkin seeds)
  • ½ (10-oz) pkg angel hair coleslaw
  • 2 Tbsp chopped fresh cilantro
  • 2 Tbsp olive oil
  • 1½ Tbsp lime juice
  • ⅛ tsp salt

Side Dish Instructions

  1. Toast pepitas in a dry skillet over medium heat until golden and fragrant.
  2. Toss together pepitas and remaining ingredients in a bowl.
