Apricot-Dijon Chicken

Green Onion Couscous and Broccoli

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 cup apricot preserves (or use peach preserves)
  • 2 Tbsp Dijon mustard

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
  2. Stir together preserves and mustard; add to skillet with chicken. Reduce heat to medium; cook 2 to 3 minutes or until sauce is thoroughly heated, turning to coat chicken.

  • 1 (10-oz) pkg couscous
  • 3 Tbsp olive oil
  • 3 green onions, thinly sliced
  • 1 (12-oz) pkg frozen broccoli florets
  • ¾ tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions. Stir in oil and onions.
  2. Cook broccoli according to package directions. Stir in Italian seasoning, salt, and pepper.
