Apricot-Dijon Chicken
Green Onion Couscous and Broccoli
Ingredients
- 1½ lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 cup apricot preserves (or use peach preserves)
- 2 Tbsp Dijon mustard
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Stir together preserves and mustard; add to skillet with chicken. Reduce heat to medium; cook 2 to 3 minutes or until sauce is thoroughly heated, turning to coat chicken.

- 1 (10-oz) pkg couscous
- 3 Tbsp olive oil
- 3 green onions, thinly sliced
- 1 (12-oz) pkg frozen broccoli florets
- ¾ tsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook couscous according to package directions. Stir in oil and onions.
- Cook broccoli according to package directions. Stir in Italian seasoning, salt, and pepper.
