Caprese Pesto Flatbreads
Cherry-Walnut Spinach Salad

Ingredients
- 2 tandoori flatbreads (or use other flatbread or naan)
- ¼ cup pesto
- 1 Roma tomato, sliced
- 3 oz fresh mozzarella cheese, sliced and patted dry
- 1 Tbsp balsamic glaze
- Crushed red pepper flakes (optional)
Instructions
- Preheat broiler. Place flatbreads on a baking sheet; spread pesto on flatbreads.
- Top with tomato and cheese. Broil 2 to 3 minutes or until cheese melts. Drizzle with glaze, and, if desired, sprinkle with red pepper.
Side Dish Ingredients
- 2 cups spinach
- ¼ cup dried cherries (or use dried cranberries)
- 3 Tbsp chopped walnuts
- 2 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl.
