Ranch Chicken Enchiladas

Ingredients
- ½ lb boneless, skinless chicken breasts, cubed
- 1 tsp Ranch dressing mix
- 4 soft taco-size flour tortillas
- ¼ cup refrigerated salsa
- 3 Tbsp Ranch dressing
- ⅓ cup shredded Mexican-blend cheese
- 2 Tbsp chopped fresh cilantro
Instructions
- Preheat broiler. Sprinkle chicken with dressing mix. Cook chicken in a nonstick skillet coated with cooking spray 6 to 8 minutes or until chicken is done.
- Divide chicken among tortillas; roll up, and place, seam sides down, in a 9-inch broiler-safe baking dish coated with cooking spray. Stir together salsa and dressing. Spoon over rolled tortillas; sprinkle with cheese.
- Broil 2 minutes or until cheese melts. Sprinkle with cilantro.
