One-Pot Cheesy Jambalaya

Ingredients

  • ¾ lb andouille sausage, halved and sliced
  • ½ lb peeled and deveined, large raw shrimp
  • 2 Tbsp olive oil
  • ½ red bell pepper, chopped
  • ½ stalk celery, chopped
  • 1 (12-oz) pkg frozen riced cauliflower
  • ½ Tbsp Cajun seasoning
  • ¼ cup water
  • 2½ Tbsp heavy cream
  • 6 Tbsp shredded Cheddar cheese

Instructions

  1. Cook sausage and shrimp in hot oil in a Dutch oven over medium-high heat 5 to 7 minutes or until sausage is browned and shrimp turns pink. Remove sausage and shrimp from skillet; keep warm.
  2. Add bell pepper, celery, cauliflower, and seasoning to same skillet; cook over medium heat 5 minutes or until vegetables are tender.
  3. Stir in water and cream. Simmer over medium-low heat 5 minutes or until slightly thickened; stir in sausage, shrimp, and cheese.
