Taco Casserole

Ingredients

  • ¾ lb ground beef
  • 1½ Tbsp olive oil
  • 1 Tbsp taco seasoning mix
  • ⅓ cup water
  • ¼ cup salsa
  • 3 keto tortillas, halved (See Note)
  • 1½ cups shredded Mexican-blend cheese
  • ¼ cup sour cream
  • 1 avocado, chopped
  • Fresh cilantro sprigs (optional)

Instructions

  1. Preheat oven to 350°F. Grease a small baking dish. Cook beef in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until browned and crumbly.
  2. Add seasoning and water; reduce heat to medium-low, and simmer 5 to 7 minutes or until slightly thickened. Stir in salsa.
  3. Arrange half of tortilla pieces in bottom of prepared dish. Top with half of beef mixture and ¾ cup cheese. Top with remaining tortillas, beef, and cheese.
  4. Cover with foil, and bake 10 minutes. Uncover and bake 5 minutes longer or until cheese is melted.
  5. Top with sour cream and avocado. Garnish with cilantro, if desired.
