Taco Casserole
Ingredients
- ¾ lb ground beef
- 1½ Tbsp olive oil
- 1 Tbsp taco seasoning mix
- ⅓ cup water
- ¼ cup salsa
- 3 keto tortillas, halved (See Note)
- 1½ cups shredded Mexican-blend cheese
- ¼ cup sour cream
- 1 avocado, chopped
- Fresh cilantro sprigs (optional)
Instructions
- Preheat oven to 350°F. Grease a small baking dish. Cook beef in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until browned and crumbly.
- Add seasoning and water; reduce heat to medium-low, and simmer 5 to 7 minutes or until slightly thickened. Stir in salsa.
- Arrange half of tortilla pieces in bottom of prepared dish. Top with half of beef mixture and ¾ cup cheese. Top with remaining tortillas, beef, and cheese.
- Cover with foil, and bake 10 minutes. Uncover and bake 5 minutes longer or until cheese is melted.
- Top with sour cream and avocado. Garnish with cilantro, if desired.
