Cheesy Smothered Chicken
French Green Beans
Ingredients
- ¾ lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 1½ Tbsp butter
- 3 slices bacon, halved
- ¾ cup sliced onion
- ¾ (8-oz) pkg sliced mushrooms
- 3 (1-oz) slices whole-milk mozzarella cheese
- 2½ Tbsp freshly grated Parmesan cheese
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in melted butter in a large nonstick skillet over medium heat 5 to 6 minutes per side or until done. Remove from skillet; keep warm.
- Cook bacon in same skillet over medium heat until crisp; drain, reserving drippings in skillet.
- Sauté onions and mushrooms in drippings over medium heat until onion is tender. Return chicken to skillet.
- Top with bacon, mushroom mixture, and mozzarella. Remove from heat; cover and let stand 2 to 3 minutes or until cheese is melted. Sprinkle with Parmesan.

- 1 tsp minced garlic
- 1½ Tbsp olive oil
- ¼ tsp salt
Side Dish Instructions
- Sauté green beans and garlic in hot oil in a large skillet over medium heat 5 to 7 minutes or until just tender, stirring often. Sprinkle with salt.
