Chicken and Refried Black Bean Tostadas

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ⅛ tsp ground cumin
  • ⅛ tsp chili powder
  • 2 almond flour tortillas
  • ¾ cup lightly salted, organic refried black beans
  • 1 romaine lettuce heart, shredded
  • ½ avocado, diced
  • ½ cup refrigerated salsa
  • ¼ cup thinly sliced red onion
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F. Sprinkle chicken with salt, pepper, cumin, and chili powder in a lightly greased baking dish.
  2. Bake 25 minutes or until chicken is done. Cool slightly, and shred.
  3. Coat tortillas with cooking spray on a baking sheet. Bake 2 to 3 minutes or until toasted. Spread refried beans on warm tortillas. Top with lettuce, chicken, avocado, salsa, onion, and cilantro.

  • 1 mango, seeded and cut into matchstick pieces
  • 1 Tbsp chopped fresh cilantro
  • 2 Tbsp fresh lime juice
  • ⅛ tsp cayenne pepper
  • ½ (5-oz) pkg grain-free tortilla chips

Side Dish Instructions

  1. Combine mango, cilantro, lime juice, and cayenne pepper in a medium-size bowl; chill until ready to serve. Serve with chips.
