Chicken and Refried Black Bean Tostadas
Spicy Mango Toss and Chips
Ingredients
- ¾ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- ⅛ tsp ground cumin
- ⅛ tsp chili powder
- 2 almond flour tortillas
- ¾ cup lightly salted, organic refried black beans
- 1 romaine lettuce heart, shredded
- ½ avocado, diced
- ½ cup refrigerated salsa
- ¼ cup thinly sliced red onion
- 2 Tbsp chopped fresh cilantro
Instructions
- Preheat oven to 375°F. Sprinkle chicken with salt, pepper, cumin, and chili powder in a lightly greased baking dish.
- Bake 25 minutes or until chicken is done. Cool slightly, and shred.
- Coat tortillas with cooking spray on a baking sheet. Bake 2 to 3 minutes or until toasted. Spread refried beans on warm tortillas. Top with lettuce, chicken, avocado, salsa, onion, and cilantro.
Side Dish Ingredients
- 1 mango, seeded and cut into matchstick pieces
- 1 Tbsp chopped fresh cilantro
- 2 Tbsp fresh lime juice
- ⅛ tsp cayenne pepper
- ½ (5-oz) pkg grain-free tortilla chips
Side Dish Instructions
- Combine mango, cilantro, lime juice, and cayenne pepper in a medium-size bowl; chill until ready to serve. Serve with chips.
