Cheesy Sausage and Tomato Soup

Ingredients

  • ½ lb ground pork sausage
  • ¼ cup thinly sliced onion
  • ½ tsp garlic salt
  • 1 Tbsp olive oil
  • ½ tsp Italian seasoning
  • 2 Roma tomatoes, diced
  • 2 oz cream cheese
  • ¾ cup low-sodium chicken broth
  • ¾ cup heavy cream
  • ¼ cup freshly shredded Parmesan cheese

Instructions

  1. Cook sausage, onion, and garlic salt in hot oil in a Dutch oven over medium-high heat 5 to 7 minutes or until sausage is browned.
  2. Add seasoning, tomatoes, and cream cheese; stir until cheese melts, about 2 to 3 minutes.
  3. Stir in broth and cream; bring to a boil, and simmer 15 to 20 minutes over low heat. Divide soup among 3 bowls; sprinkle with Parmesan cheese.
