Easy Nachos Grande
Sparkling Mint LimeadeIngredients
- 2 (14.5-oz) cans BPA-free vegetarian chili
- 2 cups corn kernels (4 ears corn; or use frozen corn)
- 2 (5-oz) pkg whole-grain tortilla chips
- 1 (8-oz) block sharp Cheddar cheese, shredded
- 2 avocados, sliced or chopped
Instructions
- Preheat oven to 350°F. Heat chili and corn in a large saucepan, stirring constantly, 3 to 4 minutes or until thoroughly heated.
- Spread chips on a large foil-lined rimmed baking sheet. Top with chili mixture and cheese.
- Bake 15 minutes or until cheese is melted. Top with avocado.
Side Dish Ingredients
- 30 fresh mint leaves
- ½ cup fresh lime juice
- 2 Tbsp honey
- 1 (1-liter) bottle sparkling water, chilled
Side Dish Instructions
- Mash mint, lime juice, and honey in a pitcher; add crushed ice.
- Pour sparkling water over mint mixture. Serve immediately.
