Easy Lemon-Dill Salmon
Lemony Italian Vegetable Rotini
Ingredients
- 1½ lb wild-caught salmon fillet
- 3 Tbsp butter, melted
- ¼ cup chopped fresh dill, divided (or use 1 Tbsp dried)
- 2 cloves garlic, minced
- 1 lemon, halved
Instructions
- Preheat broiler with oven rack 6 inches from heat. Place fish on a foil-lined baking sheet. Whisk butter, 2 Tbsp dill, and garlic in a small bowl; brush mixture on fish.
- Broil 5 to 7 minutes or until fish flakes with a fork. Sprinkle with 2 Tbsp dill. Squeeze juice from lemon over fillet.

- 1 (12-oz) pkg whole wheat rotini pasta
- 1 (12-oz) pkg frozen Italian vegetable medley
- 3 Tbsp lemon juice
- 3 Tbsp olive oil
- ¼ tsp salt
Side Dish Instructions
- Cook pasta according to package directions, adding vegetables during last 5 minutes of cooking.
- Drain and transfer to a bowl; stir in lemon juice, oil, and salt.
