Easy Lemon-Dill Salmon

Ingredients

  • 1½ lb wild-caught salmon fillet
  • 3 Tbsp butter, melted
  • ¼ cup chopped fresh dill, divided (or use 1 Tbsp dried)
  • 2 cloves garlic, minced
  • 1 lemon, halved

Instructions

  1. Preheat broiler with oven rack 6 inches from heat. Place fish on a foil-lined baking sheet. Whisk butter, 2 Tbsp dill, and garlic in a small bowl; brush mixture on fish.
  2. Broil 5 to 7 minutes or until fish flakes with a fork. Sprinkle with 2 Tbsp dill. Squeeze juice from lemon over fillet.

  • 1 (12-oz) pkg whole wheat rotini pasta
  • 1 (12-oz) pkg frozen Italian vegetable medley
  • 3 Tbsp lemon juice
  • 3 Tbsp olive oil
  • ¼ tsp salt

Side Dish Instructions

  1. Cook pasta according to package directions, adding vegetables during last 5 minutes of cooking.
  2. Drain and transfer to a bowl; stir in lemon juice, oil, and salt.
