Southern Vegetable-Plate Lima Beans with Bacon

Quick Candied Sweet Potatoes and Fried Okra

Ingredients

  • 8 slices bacon, chopped
  • 2 (16-oz) pkg frozen lima beans
  • 1 onion, chopped
  • 1 cup low-sodium chicken broth
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat 8 minutes or until crisp; drain on paper towels.
  2. Combine lima beans, half of bacon, onion, broth, garlic, salt, and pepper in a 5- to 7-quart slow cooker. Cover and cook on LOW 8 hours or until beans are tender.
  3. Sprinkle with remaining bacon before serving. Serve with a slotted spoon.

Side Dish Ingredients

  • 3 large sweet potatoes, peeled and cut into 1-inch-thick slices
  • 6 Tbsp butter, melted
  • ¼ cup molasses
  • 2 Tbsp brown sugar
  • ½ tsp salt
  • 1 (16-oz) pkg frozen breaded okra

Side Dish Instructions

  1. Boil potatoes in water to cover 10 minutes or until tender; drain and return to pot.
  2. In a small bowl, whisk together butter, molasses, brown sugar, and salt. Pour over hot cooked potatoes, tossing gently until potatoes are coated.
  3. Prepare okra according to package directions.
