Southern Vegetable-Plate Lima Beans with Bacon
Quick Candied Sweet Potatoes and Fried OkraIngredients
- 8 slices bacon, chopped
- 2 (16-oz) pkg frozen lima beans
- 1 onion, chopped
- 1 cup low-sodium chicken broth
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
Instructions
- Cook bacon in a large nonstick skillet over medium heat 8 minutes or until crisp; drain on paper towels.
- Combine lima beans, half of bacon, onion, broth, garlic, salt, and pepper in a 5- to 7-quart slow cooker. Cover and cook on LOW 8 hours or until beans are tender.
- Sprinkle with remaining bacon before serving. Serve with a slotted spoon.
Side Dish Ingredients
- 3 large sweet potatoes, peeled and cut into 1-inch-thick slices
- 6 Tbsp butter, melted
- ¼ cup molasses
- 2 Tbsp brown sugar
- ½ tsp salt
- 1 (16-oz) pkg frozen breaded okra
Side Dish Instructions
- Boil potatoes in water to cover 10 minutes or until tender; drain and return to pot.
- In a small bowl, whisk together butter, molasses, brown sugar, and salt. Pour over hot cooked potatoes, tossing gently until potatoes are coated.
- Prepare okra according to package directions.
