Smoky Pork
Balsamic-Roasted Broccoli and Cauliflower and French Bread
Ingredients
- 1 onion, chopped
- 1¾ cups low-sodium chicken broth
- 2 Tbsp smoked paprika (or use regular)
- 1 Tbsp garlic powder
- 1 Tbsp dried oregano
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp pepper
- 2½ lb bone-in pork shoulder roast, well trimmed
Instructions
- Place onion and broth in a 5- to 7-quart slow cooker.
- Combine paprika, garlic powder, oregano, cumin, salt, and pepper in a small bowl. Rub spice mixture over pork, and place in cooker.
- Cover and cook on LOW 10 hours or until pork is tender.
Side Dish Ingredients
- 1 (12-oz) pkg broccoli florets
- 1 (12-oz) pkg cauliflower florets
- 3 Tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp lemon pepper seasoning
- 2 Tbsp balsamic vinegar
- 1 (14-oz) loaf French bread
Side Dish Instructions
- Preheat oven to 350°F.
- Toss together broccoli, cauliflower, oil, garlic, salt, and lemon pepper on a greased rimmed baking sheet; spread in a single layer.
- Roast 20 to 25 minutes or until lightly browned and tender; drizzle with vinegar just before serving.
- Cut bread in half lengthwise. Place on a baking sheet; bake 5 to 8 minutes or until warm. Cut into slices.
