Sweet Pea and Basil Risotto

Ingredients
- 7 cups chicken broth
- 2 Tbsp butter
- ½ cup chopped shallots
- 2 cloves garlic, minced
- 1½ cups Arborio rice
- ⅓ cup white wine (or use vermouth)
- 1½ cups frozen green peas, thawed
- 1 (5-oz) carton shredded Parmesan cheese
- ¼ cup chopped fresh basil
Instructions
- Pour broth into a saucepan; bring to a simmer. Reduce heat to medium-low.
- Melt butter in a large saucepan over medium heat. Add shallots and garlic; cook, stirring, 2 minutes. Add rice; cook, stirring often, 2 minutes.
- Add wine; cook, stirring until liquid is absorbed. Reduce heat to medium-low.
- Add hot broth, ¾ cup at a time, stirring constantly, allowing liquid to be absorbed after each addition.
- Stir in peas, cheese, and basil, stirring until cheese is melted and peas are thoroughly heated. Season with salt and pepper, if desired.
