Tzatziki Salmon-Couscous Bowls

Ingredients
- ½ cup whole wheat Israeli (pearl) couscous
- 1 Tbsp olive oil, divided
- ¾ tsp Greek seasoning, divided
- 2 (4-oz) salmon fillets
- 3 cups baby spinach
- ½ cup sliced English cucumber, sliced
- ½ cup cherry tomatoes, halved (preferably multicolored)
- 1 small avocado, diced
- ⅓ cup thinly sliced red onion
- ½ cup tzatziki dip
Instructions
- Cook couscous according to package directions; toss with 1 tsp oil and ¼ tsp Greek seasoning.
- Meanwhile, sprinkle fish with ½ tsp seasoning. Cook fish in 2 tsp hot oil in a large skillet over medium-high heat 4 minutes per side or until fish flakes with a fork.
- Divide couscous and spinach between 2 shallow bowls. Top with salmon, cucumber, tomatoes, avocado, onion, and tzatziki dip.
