Tzatziki Salmon-Couscous Bowls

Ingredients

  • ½ cup whole wheat Israeli (pearl) couscous
  • 1 Tbsp olive oil, divided
  • ¾ tsp Greek seasoning, divided
  • 2 (4-oz) salmon fillets
  • 3 cups baby spinach
  • ½ cup sliced English cucumber, sliced
  • ½ cup cherry tomatoes, halved (preferably multicolored)
  • 1 small avocado, diced
  • ⅓ cup thinly sliced red onion
  • ½ cup tzatziki dip

Instructions

  1. Cook couscous according to package directions; toss with 1 tsp oil and ¼ tsp Greek seasoning.
  2. Meanwhile, sprinkle fish with ½ tsp seasoning. Cook fish in 2 tsp hot oil in a large skillet over medium-high heat 4 minutes per side or until fish flakes with a fork.
  3. Divide couscous and spinach between 2 shallow bowls. Top with salmon, cucumber, tomatoes, avocado, onion, and tzatziki dip.
