Grilled Lamb Skewers

Ingredients
- 1 lb boneless leg of lamb, trimmed and cubed
- 1 lemon
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp kosher salt
- ½ tsp pepper
Instructions
- Preheat grill to medium-high heat. Thread lamb onto metal skewers. Grate 1 tsp zest and squeeze 1 Tbsp juice from lemon.
- Combine oil, lemon zest, lemon juice, garlic, salt, and pepper in a small bowl; brush over lamb skewers.
- Grill, covered, 3 minutes per side or until lamb is cooked to desired doneness.
