Grilled Lamb Skewers

Grapefruit-Avocado Salad

Ingredients

  • 1 lb boneless leg of lamb, trimmed and cubed
  • 1 lemon
  • 1 Tbsp olive oil 
  • 2 cloves garlic, minced
  • ½ tsp kosher salt
  • ½ tsp pepper

Instructions

  1. Preheat grill to medium-high heat. Thread lamb onto metal skewers. Grate 1 tsp zest and squeeze 1 Tbsp juice from lemon.
  2. Combine oil, lemon zest, lemon juice, garlic, salt, and pepper in a small bowl; brush over lamb skewers.
  3. Grill, covered, 3 minutes per side or until lamb is cooked to desired doneness.

Side Dish Ingredients

  • 1 avocado, sliced
  • 1 Ruby Red grapefruit, peeled and sectioned
  • ½ (0.5-oz) pkg fresh mint, torn
  • 1 Tbsp olive oil
  • 1½ tsp honey
  • 1½ tsp lemon juice
  • ¼ tsp kosher salt
  • ¼ tsp pepper

Side Dish Instructions

  1.  Toss together all ingredients in a bowl.
