Salmon Salad with Bacon

Ingredients

  • 6 cups chopped romaine lettuce
  • 3 tomatoes, chopped
  • ½ cup olive oil
  • 3 Tbsp Dijon mustard
  • 3 Tbsp fresh lemon juice
  • 1½ tsp chopped fresh oregano
  • ¾ tsp salt, divided
  • 9 slices bacon, chopped
  • ¾ lb green beans, trimmed and cut into 2-inch pieces
  • 3 (8-oz) salmon fillets, cut into bite-size pieces

Instructions

  1. Combine lettuce and tomatoes in a large bowl; whisk together oil, mustard, lemon juice, oregano, and ½ tsp salt. Pour over lettuce; toss.
  2. Cook bacon in a skillet over medium heat until crisp. Drain, reserving drippings in skillet. Add green beans to skillet with drippings; sauté 2 minutes.
  3. Season fish with ¼ tsp salt. Add fish to skillet with green beans. Cook until fish flakes with a fork; sprinkle with bacon. Pour over salad, and quickly toss.
