Salmon Salad with Bacon

Ingredients
- 6 cups chopped romaine lettuce
- 3 tomatoes, chopped
- ½ cup olive oil
- 3 Tbsp Dijon mustard
- 3 Tbsp fresh lemon juice
- 1½ tsp chopped fresh oregano
- ¾ tsp salt, divided
- 9 slices bacon, chopped
- ¾ lb green beans, trimmed and cut into 2-inch pieces
- 3 (8-oz) salmon fillets, cut into bite-size pieces
Instructions
- Combine lettuce and tomatoes in a large bowl; whisk together oil, mustard, lemon juice, oregano, and ½ tsp salt. Pour over lettuce; toss.
- Cook bacon in a skillet over medium heat until crisp. Drain, reserving drippings in skillet. Add green beans to skillet with drippings; sauté 2 minutes.
- Season fish with ¼ tsp salt. Add fish to skillet with green beans. Cook until fish flakes with a fork; sprinkle with bacon. Pour over salad, and quickly toss.
