Ingredients

  • 1 pint multicolored grape or cherry tomatoes
  • 1 Tbsp minced garlic
  • 3 Tbsp olive oil
  • 1 (8-oz) block feta cheese
  • ¼ cup white wine
  • 1 (9-oz) pkg refrigerated three-cheese tortellini
  • ½ (0.5-oz) pkg fresh basil, chopped

Instructions

  1. Preheat oven to 425°F. Toss together tomatoes, garlic, and 2 Tbsp oil in a 1-quart baking dish. Nestle cheese in center of dish; drizzle 1 Tbsp oil over cheese.
  2. Drizzle wine over cheese and tomatoes. Bake 20 minutes or until cheese is softened and tomatoes begin to burst.
  3. Meanwhile, cook tortellini according to package directions. Mash baked cheese and tomatoes until creamy and blended. Add hot tortellini and basil; toss.

Side Dish Ingredients

  • 1 (5-oz) pkg baby arugula and baby spinach
  • ¼ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together greens and vinaigrette in a large bowl. Season with salt and pepper, if desired.
