Ingredients
- 1 pint multicolored grape or cherry tomatoes
- 1 Tbsp minced garlic
- 3 Tbsp olive oil
- 1 (8-oz) block feta cheese
- ¼ cup white wine
- 1 (9-oz) pkg refrigerated three-cheese tortellini
- ½ (0.5-oz) pkg fresh basil, chopped
Instructions
- Preheat oven to 425°F. Toss together tomatoes, garlic, and 2 Tbsp oil in a 1-quart baking dish. Nestle cheese in center of dish; drizzle 1 Tbsp oil over cheese.
- Drizzle wine over cheese and tomatoes. Bake 20 minutes or until cheese is softened and tomatoes begin to burst.
- Meanwhile, cook tortellini according to package directions. Mash baked cheese and tomatoes until creamy and blended. Add hot tortellini and basil; toss.
Side Dish Ingredients
- 1 (5-oz) pkg baby arugula and baby spinach
- ¼ cup olive oil vinaigrette
Side Dish Instructions
- Toss together greens and vinaigrette in a large bowl. Season with salt and pepper, if desired.
