Quick Beef Ratatouille

Ingredients

  • 1¼ lb ground beef
  • ¾ cup diced onion
  • 2 small cloves garlic, minced
  • ½ eggplant, diced
  • 2 tsp Italian seasoning
  • ¼ tsp kosher salt
  • 3 Roma tomatoes, seeded and chopped
  • 1½ cups torn baby spinach
  • 3 Tbsp chopped fresh basil
  • 6 Tbsp shredded whole-milk mozzarella cheese
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Cook beef, onion, and garlic in a large nonstick skillet over medium-high heat 5 minutes or until beef is browned and crumbly.
  2. Add eggplant, Italian seasoning, and salt; cook 6 minutes. Stir in tomatoes and spinach.
  3. Cook 4 minutes or until vegetables are just tender. Add basil, and sprinkle with cheeses. Cook 2 minutes or until melted.
