Quick Beef Ratatouille
Ingredients
- 1¼ lb ground beef
- ¾ cup diced onion
- 2 small cloves garlic, minced
- ½ eggplant, diced
- 2 tsp Italian seasoning
- ¼ tsp kosher salt
- 3 Roma tomatoes, seeded and chopped
- 1½ cups torn baby spinach
- 3 Tbsp chopped fresh basil
- 6 Tbsp shredded whole-milk mozzarella cheese
- ¼ cup shredded Parmesan cheese
Instructions
- Cook beef, onion, and garlic in a large nonstick skillet over medium-high heat 5 minutes or until beef is browned and crumbly.
- Add eggplant, Italian seasoning, and salt; cook 6 minutes. Stir in tomatoes and spinach.
- Cook 4 minutes or until vegetables are just tender. Add basil, and sprinkle with cheeses. Cook 2 minutes or until melted.
