Ingredients

  • 1 (16-oz) pkg miniature penne pasta (or use regular penne)
  • 1 lemon
  • ⅔ cup creamy pesto
  • 2 pints multicolored cherry tomatoes
  • 1 (5-oz) pkg baby arugula
  • 1 (0.5-oz) pkg fresh basil, chopped
  • ½ cup chopped walnuts (preferably toasted)
  • 1 cup freshly shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Grate zest and squeeze juice from lemon. Combine pesto, zest, and juice in a large bowl. Add pasta, pesto mixture, tomatoes, arugula, basil, and nuts; toss. Sprinkle with cheese.
