Ingredients

  • 1 cup instant brown rice
  • 6 burrito-size flour tortillas
  • 1 (16-oz) can refried beans
  • 1 (15-oz) can black beans, drained and rinsed
  • 2 cups shredded romaine lettuce
  • 3 Roma tomatoes, chopped
  • 1 cup shredded Mexican-blend cheese
  • ¾ cup guacamole

Instructions

  1. Cook rice according to package directions.
  2. Heat tortillas according to package directions. Spread refried beans on warm tortillas. Top with rice, black beans, lettuce, tomatoes, cheese, and guacamole.
  3. Fold in both sides of each tortilla; roll up to completely enclose filling.
