Granola Cups with Yogurt and Berries

Ingredients
- 3 cups old-fashioned oats
- ½ cup sweetened flaked coconut
- ½ cup finely chopped walnuts
- ½ cup roasted and salted sunflower seeds
- ¼ cup honey
- 3 Tbsp olive oil
- ½ tsp ground cinnamon
- ¼ tsp salt
- 3 egg whites
- ½ (32-oz) carton honey vanilla-flavored Greek yogurt
- 1 cup raspberries
- 1 cup blueberries
Instructions
- Preheat oven to 350°F. Stir together oats, coconut, nuts, sunflower seeds, honey, oil, cinnamon, and salt. Add egg whites, stirring to combine.
- Press mixture in bottom and up sides of 12 lightly greased muffin cups.
- Bake 15 to 20 minutes or until golden brown. Cool in pans 20 minutes.
- Remove from pans, and spoon yogurt into each granola cup. Top with berries, and drizzle with additional honey, if desired.
