Granola Cups with Yogurt and Berries

Ingredients

  • 3 cups old-fashioned oats
  • ½ cup sweetened flaked coconut
  • ½ cup finely chopped walnuts
  • ½ cup roasted and salted sunflower seeds
  • ¼ cup honey
  • 3 Tbsp olive oil
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 3 egg whites
  • ½ (32-oz) carton honey vanilla-flavored Greek yogurt
  • 1 cup raspberries
  • 1 cup blueberries

Instructions

  1. Preheat oven to 350°F. Stir together oats, coconut, nuts, sunflower seeds, honey, oil, cinnamon, and salt. Add egg whites, stirring to combine.
  2. Press mixture in bottom and up sides of 12 lightly greased muffin cups.
  3. Bake 15 to 20 minutes or until golden brown. Cool in pans 20 minutes.
  4. Remove from pans, and spoon yogurt into each granola cup. Top with berries, and drizzle with additional honey, if desired.
