Raspberry-Amaretto Bellini
Ingredients
- 2 cups sugar
- 2 cups water
- 1½ pints raspberries, divided
- 2 tsp lemon juice
- 1 (750-ml) bottle sparkling wine or champagne
- ¼ cup amaretto
Instructions
- Combine sugar, water, and 1 pint raspberries in a saucepan; bring to a boil, reduce heat, and simmer 5 minutes. Remove from heat, and let cool 15 minutes; stir in lemon juice.
- Strain mixture, discarding solids. Cover remaining syrup, and chill up to 2 weeks.
- Pour about 2 Tbsp raspberry syrup into each serving glass; top with champagne and 1 tsp amaretto. Garnish with remaining raspberries.
