Raspberry-Amaretto Bellini

Ingredients

  • 2 cups sugar
  • 2 cups water
  • 1½ pints raspberries, divided
  • 2 tsp lemon juice
  • 1 (750-ml) bottle sparkling wine or champagne
  • ¼ cup amaretto

Instructions

  1. Combine sugar, water, and 1 pint raspberries in a saucepan; bring to a boil, reduce heat, and simmer 5 minutes. Remove from heat, and let cool 15 minutes; stir in lemon juice.
  2. Strain mixture, discarding solids. Cover remaining syrup, and chill up to 2 weeks.
  3. Pour about 2 Tbsp raspberry syrup into each serving glass; top with champagne and 1 tsp amaretto. Garnish with remaining raspberries.
