Slow Cooker Chicken Reuben Casserole

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (12-oz) jar sauerkraut, drained
  • 5 slices Swiss cheese
  • ⅔ cup Thousand Island dressing
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Place chicken in 5- or 6-quart slow cooker coated with cooking spray. Spoon sauerkraut over chicken. Add cheese slices; pour dressing over cheese.
  2. Cover and cook on LOW 6 to 8 hours or until chicken is tender. Sprinkle with parsley before serving.

  • 1 lb green beans, trimmed
  • 3 Tbsp olive oil
  • 2 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Combine all ingredients on a rimmed baking sheet, and toss.
  2. Bake 12 to 15 minutes until green beans are browned and tender, stirring after 6 minutes.
