Italian Quiche
Spring Mix with Basil VinaigretteIngredients
- ½ lb ground beef
- ½ lb ground Italian pork sausage
- 1 clove garlic, minced
- ¼ cup chopped onion
- ¼ cup diced green bell pepper
- ½ cup tomato sauce
- ¼ tsp salt
- ⅛ tsp pepper
- ⅛ tsp dried oregano
- 1 (8-oz) pkg shredded whole-milk mozzarella cheese, divided
- 2 large eggs
- ⅓ cup mayonnaise
- ¼ cup half-and-half
- 1 Tbsp freshly grated Parmesan cheese
Instructions
- Preheat oven to 350°F. Cook beef, sausage, garlic, onion, and bell pepper in a large skillet over medium-high heat until beef is browned and crumbly. Add tomato sauce, salt, pepper, and oregano.
- Spoon mixture into a greased pie plate. Sprinkle with 1 cup mozzarella.
- Beat eggs; stir in mayonnaise, half-and-half, and 1 cup mozzarella. Pour into pie plate over beef mixture; sprinkle with Parmesan.
- Bake 35 minutes or until center is set. Let stand 10 minutes before serving.

- 1 (0.5-oz) pkg fresh basil
- ⅓ cup olive oil
- 2 Tbsp fresh lemon juice
- 1 Tbsp red wine vinegar
- 3 cloves garlic
- ½ tsp salt
- 2 (5-oz) pkg spring mix
Side Dish Instructions
- Process basil, oil, lemon juice, vinegar, garlic, and salt in a blender or mini food processor until smooth.
- Toss vinaigrette with spring mix in a large bowl.
