Italian Quiche

Spring Mix with Basil Vinaigrette

Ingredients

  • ½ lb ground beef
  • ½ lb ground Italian pork sausage
  • 1 clove garlic, minced
  • ¼ cup chopped onion
  • ¼ cup diced green bell pepper
  • ½ cup tomato sauce
  • ¼ tsp salt
  • ⅛ tsp pepper
  • ⅛ tsp dried oregano
  • 1 (8-oz) pkg shredded whole-milk mozzarella cheese, divided
  • 2 large eggs
  • ⅓ cup mayonnaise
  • ¼ cup half-and-half
  • 1 Tbsp freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F. Cook beef, sausage, garlic, onion, and bell pepper in a large skillet over medium-high heat until beef is browned and crumbly. Add tomato sauce, salt, pepper, and oregano.
  2. Spoon mixture into a greased pie plate. Sprinkle with 1 cup mozzarella.
  3. Beat eggs; stir in mayonnaise, half-and-half, and 1 cup mozzarella. Pour into pie plate over beef mixture; sprinkle with Parmesan.
  4. Bake 35 minutes or until center is set. Let stand 10 minutes before serving.

  • 1 (0.5-oz) pkg fresh basil
  • ⅓ cup olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp red wine vinegar
  • 3 cloves garlic
  • ½ tsp salt
  • 2 (5-oz) pkg spring mix

Side Dish Instructions

  1. Process basil, oil, lemon juice, vinegar, garlic, and salt in a blender or mini food processor until smooth.
  2. Toss vinaigrette with spring mix in a large bowl.
