Salisbury Steak Casserole

Simple Spinach Salad

Ingredients

  • 1½ lb ground beef
  • 1 small onion, chopped
  • 1 (8-oz) pkg sliced mushrooms
  • 2 Tbsp almond flour
  • 1¾ cups low-sodium beef broth
  • 2 Tbsp Worcestershire sauce
  • ½ tsp pepper
  • 1 (20-oz) pkg frozen mashed cauliflower
  • ¼ cup chopped fresh parsley

Instructions

  1. Preheat oven to 400°F. Cook beef, onion, and mushrooms in a large ovenproof skillet until beef is browned and crumbly.
  2. Stir in flour; cook, stirring constantly, 2 minutes. Add broth and Worcestershire. Bring to a boil, and cook, stirring often, until thickened; sprinkle with pepper, if desired. Transfer beef mixture to a greased 13- x 9-inch baking dish.
  3. Meanwhile, cook cauliflower according to package directions. Dollop and spread cauliflower over beef. Bake 10 to 15 minutes or until cauliflower is lightly browned. Sprinkle with parsley.

  • ½ tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 Tbsp olive oil
  • 1 (10-oz) pkg baby spinach

Side Dish Instructions

  1. Combine lemon juice, mustard, salt, and pepper in a bowl; slowly whisk in oil until blended. Add spinach; toss.
