Salisbury Steak Casserole
Simple Spinach Salad
Ingredients
- 1½ lb ground beef
- 1 small onion, chopped
- 1 (8-oz) pkg sliced mushrooms
- 2 Tbsp almond flour
- 1¾ cups low-sodium beef broth
- 2 Tbsp Worcestershire sauce
- ½ tsp pepper
- 1 (20-oz) pkg frozen mashed cauliflower
- ¼ cup chopped fresh parsley
Instructions
- Preheat oven to 400°F. Cook beef, onion, and mushrooms in a large ovenproof skillet until beef is browned and crumbly.
- Stir in flour; cook, stirring constantly, 2 minutes. Add broth and Worcestershire. Bring to a boil, and cook, stirring often, until thickened; sprinkle with pepper, if desired. Transfer beef mixture to a greased 13- x 9-inch baking dish.
- Meanwhile, cook cauliflower according to package directions. Dollop and spread cauliflower over beef. Bake 10 to 15 minutes or until cauliflower is lightly browned. Sprinkle with parsley.

- ½ tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
- 3 Tbsp olive oil
- 1 (10-oz) pkg baby spinach
Side Dish Instructions
- Combine lemon juice, mustard, salt, and pepper in a bowl; slowly whisk in oil until blended. Add spinach; toss.
