Tikka Masala Meatballs
Turmeric Rice
Ingredients
- 2 (10-oz) pkg plant-based Italian-style meatballs
- 2 Tbsp olive oil, divided
- 1 onion, thinly sliced
- 2 cups vegan tikka masala simmer sauce
- ¼ cup low-sodium vegetable broth
Instructions
- Brown meatballs, in batches if necessary, in 1 Tbsp hot oil in a large skillet over medium-high heat 3 to 4 minutes, turning occasionally. Remove from skillet, and keep warm.
- Sauté onion in 1 Tbsp hot oil in skillet over medium-high heat 5 minutes. Stir in sauce and broth; bring to a boil. Reduce heat to medium, and simmer 5 minutes.
- Return meatballs to skillet; simmer, covered, 5 minutes or until meatballs are done. Serve meatballs over Turmeric Rice recipe.
Side Dish Ingredients
- 2 (3.5-oz) pouches boil-in-bag basmati rice
- ½ tsp ground turmeric
- ½ tsp salt
- 2 cloves garlic, minced
- 2 tsp ginger paste
- 1 Tbsp olive oil
Side Dish Instructions
- Cook rice according to package directions, stir in turmeric and salt.
- Sauté garlic and ginger in hot oil in a saucepan over medium-high heat 1 minute or until fragrant. Add rice; toss.
