Ingredients

  • 12 oz rotini pasta
  • 1 cup frozen green peas
  • 1 lb sliced Black Forest ham, cut into slivers
  • 2 Tbsp jarred minced garlic
  • 1 Tbsp olive oil
  • 1 (12-oz) jar marinated quartered artichoke hearts, drained
  • 1 tomato, chopped
  • ½ cup olive oil vinaigrette
  • 1 (6-oz) pkg shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions, adding peas during last 3 minutes of cooking. Drain.
  2. Meanwhile, sauté ham and garlic in hot oil in a large skillet over medium-high heat 2 to 3 minutes; add drained artichokes. Cook 1 minute. Transfer to a large bowl.
  3. Add pasta, peas, tomato, and vinaigrette; toss. Stir in cheese. Season with salt and pepper, if desired.

Side Dish Ingredients

  • 1 (2-oz) pkg pine nuts
  • 1 (11-oz) pkg baby spinach
  • ½ cup olive oil vinaigrette (or use lemon vinaigrette)

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat just until golden; cool.
  2. Toss together spinach and vinaigrette; sprinkle with nuts.
