Black Forest Ham-Rotini Pasta Bowl
Baby Spinach with Pine Nuts

Ingredients
- 12 oz rotini pasta
- 1 cup frozen green peas
- 1 lb sliced Black Forest ham, cut into slivers
- 2 Tbsp jarred minced garlic
- 1 Tbsp olive oil
- 1 (12-oz) jar marinated quartered artichoke hearts, drained
- 1 tomato, chopped
- ½ cup olive oil vinaigrette
- 1 (6-oz) pkg shredded Parmesan cheese
Instructions
- Cook pasta according to package directions, adding peas during last 3 minutes of cooking. Drain.
- Meanwhile, sauté ham and garlic in hot oil in a large skillet over medium-high heat 2 to 3 minutes; add drained artichokes. Cook 1 minute. Transfer to a large bowl.
- Add pasta, peas, tomato, and vinaigrette; toss. Stir in cheese. Season with salt and pepper, if desired.
Side Dish Ingredients
- 1 (2-oz) pkg pine nuts
- 1 (11-oz) pkg baby spinach
- ½ cup olive oil vinaigrette (or use lemon vinaigrette)
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat just until golden; cool.
- Toss together spinach and vinaigrette; sprinkle with nuts.
