Cheesy Sausage and Tomato Soup

Ingredients
- 1 lb ground pork sausage
- ½ small onion, thinly sliced
- 1 tsp garlic salt
- 2 Tbsp olive oil
- 1 tsp Italian seasoning
- 4 Roma tomatoes, diced
- ½ (8-oz) block cream cheese
- 1½ cups low-sodium chicken broth
- 1½ cups heavy cream
- ½ cup freshly shredded Parmesan cheese
Instructions
- Cook sausage, onion, and garlic salt in hot oil in a large Dutch oven over medium-high heat 5 to 7 minutes or until sausage is browned.
- Add seasoning, tomatoes, and cream cheese; stir until cheese melts, about 2 to 3 minutes.
- Stir in broth and cream; bring to a boil, and simmer 15 to 20 minutes over low heat. Divide soup among 6 bowls; sprinkle with Parmesan cheese.
