Broccoli-Quinoa Chicken

Ingredients
- 1 onion, chopped (or use frozen chopped onion)
- 2 Tbsp olive oil
- 1½ lb boneless, skinless chicken breasts, cut into bite-size pieces
- 1 cup organic quinoa
- 2½ cups low-sodium chicken broth
- 2 (10-oz) pkg frozen chopped broccoli
- 1 tsp kosher salt
- ½ tsp pepper
- ¾ cup Greek yogurt
- 1¼ cups shredded sharp Cheddar cheese
Instructions
- Sauté onion in hot oil in a large cast-iron skillet or Dutch oven over medium heat 2 minutes. Add chicken; sauté 3 minutes.
- Add quinoa and broth; bring to a boil. Cover, reduce heat, and cook 12 minutes.
- Stir in broccoli, salt, and pepper; cook 5 minutes or until broccoli is tender. Remove from heat. Stir in yogurt and ¾ cup cheese. Sprinkle with ½ cup cheese.
- Preheat broiler. Broil 2 to 3 minutes or until cheese is bubbly.
