Oven-Baked Shrimp Scampi

Ingredients

  • ½ lemon
  • ¾ lb peeled and deveined, large raw shrimp
  • 1 clove garlic, minced
  • 1 Tbsp white wine (or use low-sodium chicken broth)
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 3 Tbsp panko breadcrumbs
  • 2 Tbsp freshly grated Parmesan cheese
  • 1 Tbsp butter, melted
  • 2 Tbsp chopped fresh parsley, divided

Instructions

  1. Preheat oven to 425°F. Grate zest and squeeze juice from lemon to measure ¾ tsp zest and 2 tsp juice.
  2. Combine lemon juice, shrimp, garlic, wine, salt, and pepper in a bowl, tossing to coat shrimp.
  3. Combine panko, cheese, butter, 1 Tbsp parsley, and lemon zest in a second bowl. Dredge shrimp in panko mixture, pressing gently to adhere. Place on a greased wire rack on a rimmed baking sheet.
  4. Bake 8 to 10 minutes or until shrimp turn pink. Remove from oven.
  5. Increase oven temperature to broil. Broil shrimp 2 minutes or until lightly browned. Sprinkle with 1 Tbsp parsley.

  • ½ lb asparagus, trimmed
  • 2 tsp olive oil
  • ¼ tsp Italian seasoning
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Cook pasta according to package directions.
  2. Meanwhile, toss together asparagus, oil, seasoning, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  3. Bake 10 to 15 minutes or until crisp-tender.
