Pistachio-Dijon Salmon
Brown Rice and Steamed BroccoliIngredients
- 2 tsp whole-grain Dijon mustard
- ½ tsp honey
- ½ tsp white wine vinegar
- 1 (½-lb) salmon fillet
- ¼ tsp kosher salt
- ¼ tsp pepper
- 3 Tbsp chopped pistachios
Instructions
- Preheat oven to 425°F. Combine mustard, honey, and vinegar in a small bowl.
- Place fish on a foil-lined baking sheet. Spread mustard mixture on fish. Sprinkle with nuts, pressing gently to adhere.
- Bake 10 to 15 minutes or until fish flakes with a fork.

- 1 (12 oz) pkg broccoli florets
- 2 tsp olive oil
- ⅛ tsp kosher salt
- ⅛ tsp pepper
